Ingredients

  • 1 (1lb) box penne pasta
  • 2 boneless chicken breasts
  • 2 handfuls fresh spinach
  • 1 (14 1/2 oz) can Italian-style diced tomatoes (drained)
  • 2 (16oz) jars alfredo sauce
  • 2 (8oz) cans tomato sauce
  • 8 oz sliced fresh mushrooms
  • parmesan cheese or feta cheese
  • olive oil

Preparation

Step 1

1. Cook chicken breasts in boiling water. Slice into pieces
2. Cook penne noodles
3. Saute mushrooms in olive oil (about 5 minutes)
4. Add alfredo sauce, tomatoes, tomato sauce, and spinach. Simmer on low for 15-20 minutes. Add chicken
5. Drain pasta and add to sauce
6. Sprinkle with cheese.
