Cranberry Pudding Cake (slow cooker)

  • 1 (16 oz)( package pound cake mix
  • 1 (4 oz) package French vanilla pudding mix
  • 1 1/2 cups sour cream
  • 3 eggs, beaten
  • 3/4 cup vegetable oil
  • 1/2 cup water
  • 1/4 cup cranberry juice
  • 1/2 cup fresh cranberries, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup white chocolate chips

Preparation

Step 1

Spray a 4 qt. slow cooker with nonstick baking spray containing flour. In large bowl, combine cake mix, pudding mix, sour cream, eggs, oil, water, and cranberry juice. Beat with electric mixer until combined, then scrape sides and beat for 2 minutes longer.

Fold in the cranberries, dried cranberries and white chocolate chips. Pour batter into prepared slow cooker, cover, and cook on low for 6-7 hours or until the cake begins to pull away from sides of the pan.

To serve, scoop cake out of slow cooker and top with ice cream or whipped cream.
