Caesar Dressing

This recipe came from a strange place. A little cookbook was included with a cheap blender I bought at K-Mart. The blender broke after a few weeks but I kept the recipe.

  • ½ teaspoon salt (try less salt first) ¼ teaspoon black pepper

Mix all the ingredients except the olive oil in a blender. I never tried it in a food processor but I don’t think it would be as smooth.
You can adjust the amount of garlic to suit your taste. One clove seems to be about right for the “average” person.
Drizzle the olive oil in slowly. You need ot add it slow or it will not emulsify and the dressing will be thin. Keep it cold in the refrigerator until ready to use.

Rinse romain and chop into bite size pieces.

You can make good croutons in the frying pan with French bread, olive oil, a little butter garlic and salt. A lot of people seem to like them kind of soft instead of hard and crispy.

Add lettuce, croutons and dressing in a large bowl. It seems to work best to mix it all with your hands.

Top with grated parmesan and fresh ground black pepper. Extra anchovies are optional.

We usually serve it with grilled chicken or thinly sliced steak on top.
