Pizza Chicken (in a foil packet)

Spaghetti chicken:
substitute spaghetti sauce for the pizza sauce and top with sliced zucchini, mozzarella cheese and parmesan cheese.

Alfredo chicken:
Substitute alfredo-style pasta sauce for the pizza sauce and substitute sliced mushrooms for the other pizza toppings Serve over cooked spaghetti or linguini.

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 20 slices pepperoni
  • 1 small onion, chopped
  • Options: add other favorite pizza toppings: mushrooms, sliced black or green olives.

Preparation

Step 1

Cut 4 pieces of heavy-duty foil, each large enough to wrap around one chicken breast with toppings. Spray the foil with nonstick vegetable spray.

Set 1 chicken breast half on each piece of foil. Spread 1/4 cup pizza sauce over each piece of chicken. Sprinkle with 1/4 cup mozzarella on top, followed by pepperoni slices and onion. Press down on toppings slightly to hold them in place.

Wrap foil in a tent pack around each serving. (fold over top a couple of times leaving a couple of inches of space on top. Tightly seal ends.)

Oven: cook in preheated 450 degree oven on a baking sheet for 18-25 minutes or until chicken is fully cooked.

Grill: Place foil packets on grill over direct medium-high heat; close lid and cook for 12-18 minutes or until chicken is fully cooked. Move packets as needed to obtain even heating.
