Pizza Sauce

To be used for home made pizza

Ingredients

  • 1 small onion, chopped
  • 1 small red bell pepper, seeded and chopped
  • 1 garlic clove, crushed
  • 2 tbsp olive oil
  • 8 oz. tomatoes (canned or fresh)
  • 1 tbsp tomato paste
  • 1 tsp light brown sugar
  • 2 tsp chopped basil (fresh or dried)
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • salt and pepper

Preparation

Step 1

Saute the onion, bell pepper and garlic gently in the oil for 5 minutes, until softened, but not browned.

Chop the tomatoes, and add to the onion mixture with the tomato paste, sugar, herbs, and seasoning. Stir well. Bring to a boil. Cover and simmer gently for 30 minutes, stirring occasionally, until the sauce has thickened.

Remove the bay leaf and adjust the seasoning to taste Let cool completely before using.
