Biscotti-Almond Anise

Ingredients

  • 3/4 cup sugar 2 teaspoons baking powder
  • 1 stick unsalted butter, softened 1/2 teaspoon salt
  • 3 large eggs 1 cup blanched, toasted, and coarsely chopped
  • 2 Tablespoons Brandy almonds
  • 1 Tablespoon+ grated lemon rind 1-Tablespoon anise seeds
  • 3 cups flour

Preparation

Step 1

In a large bowl, cream butter with sugar until light and fluffy. Beat in eggs, one at a time, beating well after each addition, and then add brandy and lemon rind. Into a separate bowl, sift together flour, baking powder and salt and stir the mixture into the butter mixture. Add almonds and anise seeds. Chill the dough, covered, for 1 hour. Halve the dough (or 3 parts) and on a lightly buttered baking sheet shape each half into a log each 16x2 1/2 x3/4 inches. Bake at 350 for 15-20 minutes or until lightly golden. Let the loaves cool on baking sheet. Cut diagonally into 1/2 inch slices with a serrated knife. Arrange the slices close together in one layer on lightly buttered baking sheets. Bake 15-20 minutes at 350- until dry. Makes about 65
