Peruvian Beef and Potato Stir-Fry (Lomo Saltado)

Ingredients

  • 1 pound top sirloin steak
  • vegetable oil
  • 2 garlic cloves
  • 2 red onions, sliced lengthwise
  • 2 large tomatoes, cut into wedges
  • 1 red bell pepper, cut into strips
  • 1 Tablespoon fresh oregano
  • 1 Tablespoon white wine vinegar
  • 2 Tablespoons soy sauce
  • 1 Tablespoon flat leaf parsley
  • salt and pepper
  • Oven roasted or deep fried potatoes

Preparation

Step 1

Cut meat into bite-sized pieces, stir-fry in large pan in hot oil for a few minutes, remove and keep warm.

In same pan add garlic, onions, tomatoes, red pepper, oregano, and salt and pepper, to taste. Stir-fry 2 minutes. Add vinegar and soy sauce. Stir and cook 2 more minutes

Add meat, stir fry until it heats through. Toss with oven roasted or deep fried potatoes. Sprinkle with parsley and serve.
