Chicken with Blue Cheese

Ingredients

  • 4 sauteed chicken breast halves
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup flour
  • 1 tbsp olive or canola oil
  • 1 tbsp butter
  • 1 small shallot, finely chopped
  • 1 cup heavy cream
  • 1/3 cup crumbled blue cheese
  • 3 tbsp parmesan
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh parsley

Preparation

Step 1

1. Season breasts with salt and pepper on both sides. Dredge chicken in flour.
2. Heat oil in skillet over medium high heat. Add butter and swirl until melted. Place chicken in skillet top sides down. Reduce heat to medium and saute 7 minutes turning once.
3. Place skillet with droppings and add shallot. Saute 2 minutes or until shallot starts to soften.
4. Pour in cream and bring to boil. Boil 3 minutes or until mixture is thickened, stirring occasionally.
5. Remove from heat and whisk in cheeses, salt, pepper and parslet until cheese melts and sauce is smooth.
6. Spoon over chicken breasts.
