French Chateau Chicken

  • 1 box Uncle Bean's Long Grain & Wild Original Rice Recipe
  • 6 boneless, skinless chicken breasts
  • 12 oz. Boursin cheese
  • 6-12 slices maple smoked bacon

Preparation

Step 1

Prepare rice according to directions. Rinse chicken under cold water and pat dry. Flatten each chicken breast by pounding between 2 sheets of waxed paper. Spread 1/4 c. Boursin cheese over each breast; top with 1/2 c. cooked rice mixture. Roll up breasts, tucking in edges. Wrap 1-2 slices of bacon around each breast. Heat broiler, and broil 4" from heat for 10-15 min. or until chicken juices run clear.
