Meals (Old Bay Roast Chicken)

Ingredients

  • 1 lemon
  • 1 roasting chicken (6 to 7 pounds)
  • 1 Tbsp canola oil
  • 1 Tbsp plus 1 tsp Old Bay seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Preparation

Step 1

1) Position oven rack in center of oven. Preheat oven to 375 degrees. Grate 2 tsp zest from lemon. Cut zested lemon into quarters; reserve. Place chicken in roasting pan; brush with oil.

2) Combine 1 Tbsp Old Bay seasoning, zest, garlic powder and salt; sprinkle over chicken. Sprinkle remaining Old Bay seasoning in cavity; fill with lemon quarters. Truss.

3) Roast until meat thermometer inserted into thickest part of thigh reads 180 degrees and juices run clear when pierced, about 1 hour 40 minutes. Let stand 10 minutes before carving.
