Chocolate Cheese Cupcakes

Ingredients

  • Filling:
  • 1 C flour
  • 1/2 C cocoa
  • 1 tsp baking powder
  • pinch of kosher salt
  • 6 TB butter
  • 1 C sugar
  • 1 egg
  • scant 3/4 cup milk
  • 12 oz whipped cream cheese
  • 4 tsp vanilla extract
  • 1/2 C sugar
  • 1/2 C mini choc chips
  • Ganache:
  • 3/4 C choc chips
  • 1/2 C heavy cream

Preparation

Step 1

1. Preheat oven to 350. Line muffin pan with liners
2. In large bowl, sift together flour, cocoa, baking powder and salt.
3. In the bowl of the mixer, combine butter and sugar. Beat at medium speed for at least 1 minute. Add egg and beat until combined. At low speed, gradually add half the flour mixture, then milk, then remaining flour mixture. Beat until combined.
4.Prepare filling: Whisk together cream cheese, vanilla,sugar and choc chips.

5. Pour a small amount of choc batter into each cupcake liner (just enough to cover the bottom). add a heaping tsp of the cheese filling. Cover with additional choc batter until cupcake liner is to thirds full. Bake for 20 minutes. Let cool.

6. Prepare ganache: Combine chocolate and heavy cream in a double boiler. Heat. stirring occasionally, until choc is melted. Stir to combine. Remove from heat.

7. When muffins are cool, dip tops in ganache. Refrigerate until set.
