Ingredients

    cup molasses (for best results, use Unsulphured Blackstrap Molasses)

  • 4

    eggs

  • 1/4

    cup almond milk

  • 1

    tsp vanilla

  • 1/3

    cup coconut oil, melted

  • 1/2

    cup almond flour

  • 1/2

    cup coconut flour

  • 1

    tsp baking soda

  • 1

    tsp cinnamon

  • 1

    tsp ginger

  • 1

    tsp nutmeg

Directions

1. Preheat oven to 400 degrees. Grease an 8x4 loaf pan, you can also use a 9x5. 2. Whisk together the molasses, eggs, almond milk, vanilla and coconut oil. 3. In a separate large bowl, mix almond flour, coconut flour, spices and baking soda 4. Make a well in the middle of the dry ingredients and pour the wet mixture in. Stir until thoroughly combined and there are no lumps. 5. Pour mixture into the greased loaf tin and bake for 25-40 minutes, or until toothpick comes out clean. Start checking at 25 minutes and check every 5 from there.
