Marlene's Old-Fashioned Chocolate Mayo Cake

Ingredients

  • 1/4 cup and 2 tablespoons cocoa powder
  • 1/2 cup hot water
  • 3/4 cup granulated no-calorie sweetener (like Splenda)
  • 2 tablespoons brown sugar
  • 1/3 cup low-fat milk
  • 1 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup light mayonnaise
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Preparation

Step 1

1. Preheat the oven to 350 degrees. Spray a 9-inch round baking pan with non-stick baking spray.

2. Place the cocoa powder in a large bowl. Add the hot water and whisk until smooth.

3. Whisk in the sweetener until smooth, then add the brown sugar, milk, vanilla extract, egg, and mayonnaise and continue whisking until smooth.

4. Gradually sift in the flour, baking soda, and baking powder and stir until well mixed.

5. Pour the batter into the prepared pan and smooth the top. Bake for 13 to 15 minutes or until the center of the cake springs back when touched or a toothpick inserted into the center comes out clean.
