Ingredients
- 1 refrigerated rolled pie crust
- (1 - 2 T oil)
- ¾ c chopped onion
- 1 box meatless burgers
- 16 oz bag mixed veggies; peas, corn, carrots
- (2 T cornstarch)
- (½ c water)
- 16 oz bag broccoli flowerets
- (1 T soy sauce)
- (1 T olive oil)
Preparation
Step 1
Preheat oven to 350º. Remove pie crust from
‘fridge to soften. In a med sized skillet, heat oil and
sauté onion until soft. Crumble burger & add to
skillet, stirring until thoroughly heated. In a cup, mix
cold water and cornstarch until dissolved then add
to skillet along with vegetables. Stir well. Turn heat
to low & simmer, stirring occasionally until
thickened. Mixture should not be runny. Turn off
heat and cover. Coat 9x12" dish w/ nonstick spray
& pour in veggie mixture. Unroll pie crust and place
over casserole. Trim & piece crust as desired.
Place in oven and bake for apx 15-18 min or until
crust is golden brown.
Prepare broccoli according to package
directions. Drain excess water, add soy sauce and
olive oil. Season as desired and serve alongside
pot pie.
