  • Amy’s Beef Brisket
  • (serves 8-10)
  • 1 5lb single brisket
  • 1 cup Coca-Cola (not diet, not Zero, just Classic please)
  • 1 cup apricot jam
  • 1/2 cup tomato sauce (homemade or store bought)
  • 1 packet dry onion soup mix, such as Lipton's
  • 1 tsp ground ginger
  • 1 tsp kosher salt
  • fresh cracked pepper to taste

Preparation

Step 1

Set temperature to LOW.
Place brisket in slow cooker.
In a large mixing bowl, add the rest of the ingredients.
Pour over brisket. Let rest for 4-6 hours (or overnight)
Cover and cook on LOW 8 to 10 hours.
Remove from slow cooker and allow to rest for 10 minutes.
Slice thin.
Serve on rolls or over rice.
