Ingredients
- GLAZE:
- 1 Tbsp. butter for pan
- 2 3/4 cups plus 2 Tbsp flour
- 2 teasp. baking powder
- 11/4 teasp. salt
- 1 cup softened butter
- 2 cups sugar
- 4 eggs
- 1 cup milk
- 2 scant Tbsp. grated lemon peel
- 1/3 cup lemon juice
- 3/4 cup sugar
Preparation
Step 1
Butter tube pan. Dust with 2 Tbsp. flour
Combine remaining 2 3/4 cups flour, baking powder and salt. Set aside
Cream butter and sugar until fluffy. Beat in eggs 1 at a time. Add dry ing. alternately with milk and flour mixture. Beat until smoothe after each addition. DO NOT OVERBEAT. Fold in lemon peel. Pour into tube pan and bake 1 hr and 110 mins. @ 350 degrees
Remove from oven and let stand 5 mins.
Invert on wire rack over wax paper and brush glaze over hot cake. Cool completely.
