Portuguese Shrimp and Sausage Soup

Ingredients

  • 1 Can fire-roasted diced tomatoes
  • 4 red potatoes, quartered
  • 8 oz choriso, sliced 1/2 in thick
  • 1 lg cubanelle or italian frying pepper, quartered and sliced (1 cup)
  • 1 stalk celery, thinly sliced
  • 1/2 cup white wine
  • 1/2 cup water
  • 1/4 cup finely chopped onion
  • 1/2 tsp smoked paprika
  • 1/2 tsp minced garlic
  • 1/4 tsp each salt and dried thyme
  • 1 lb med shrimp, peeled, deveined and thawed

Preparation

Step 1

Place all ingredients except shrimp in slow-cooker. Gently stir until combined and vegetables are covered in cooking liquid. Cover and cook on low 6-9 hrs until veggies tender
Turn heat to high, Add shrimp to slow-cooking, pushing them down into soup. Cover and cook on high 15 minutes. Garnish with cilantro, if desired
