Christmas Creamed Onions
- 1 1/2 Tablespoon butter Pinch of pepper
- 1 1/2 Tablespoon flour 1/2 teaspoon nutmeg
- 1 1/2 cup milk dry sherry to taste (2 T)
- 1/2 cup chopped almond 1/2 cup fresh breadcrumbs
- 3/4 teaspoon salt butter
Precook onions and skin. Make roux of butter and flour. Stir in milk and cook until slightly thickened.
Add almonds, salt and pepper, nutmeg and sherry. Put onions in small casserole or use glass pie plate. Pour sauce over. Top with breadcrumbs, dot with butter. Bake at 375 for about 30 minutes
