Ingredients
- 1/4 pound sliced bacon, cut crosswise into thin stripes

Step 1
In large fry pan,cook bacon until cruise. Drain on paper towels. Pournoff all but 2 TBS of bacon grease. Add cooking oil if necessary. Add onions and sauté. Stir in the potatoes, water and salt. Bring to a boil. Reduce heat and simmer until potatoes are tender. About 14-20 minutes.
Remove half of the soup and purée in a blender. Or mash with a potato masher. Return the purée to the soup. Over low heat, add cheese and stir until heated.
Serve soup topped with bacon and chives.
