Basil Butter *
For fish and shellfish.
- 7 Tblsp butter, diced
- 1 large bunch of fresh basil, leaves torn into pieces
- 2-3 tbslp lemon juice, strained
- Salt and Pepper.
Place the butter in the top of a double boiler or in a heatproof bowl and melt over barely simmering water. Remove the pan from the heat , whisk in the basil and lemon juice, and season with salt and pepper.
