Step 1
Preheat oven to 350 and butter 9 extra large muffin tin openings with one cup capacity. Sift 1 c flour, 1 c cornmeal, 2 tbsp sugar, 3/4 tsp smoked paprika, 2 tsp baking powder, 1 tsp baking soda and 1/2 tsp salt. Then in large bowl use a fork to combine 1 1/4 c buttermilk (can use non fat), 1 large egg and 4 tbsp melted butter. Stir in the flour mixture just until incorporated. Then mix in 5 strips cooked bacon and 1/3 c sharp cheddar cheese. Then pour in a scant 1/2 c batter into each of the 9 buttered mufffin tin cups. Bake 8 minutes, sprinkle 2/3 c cheddar cheese over muffins, continue baking about 10 minutes or unti tookpick comes out clean. WE TRIED THESE 1/12 AND THEY WERE VERY GOOD.
