- Salad:
- 2 1/2 c chopped Romaine
- 1 can of black beans
- 3/4 c chopped peeled jicama
- 3/4 c corn kernels, uncooked
- 3/4 c thinly sliced radishes
- 1/2 ripe Avocado, diced
- 1 Red bell pepper
- matchstick carrots
- Grilled chicken, diced
- 1/4 c crumbled feta cheese
- Dressing:
- 1/4 c fresh lime juice
- 1/4 c olive oil
- 2 tbsp honey
- 2 tbsp cilantro
- 1 garlic clove, peeled and minced
- 1 tsp chopped jalapeno pepper (use canned for less heat)
