Blueberry Muffins

Ingredients

  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 teasp. baking powder
  • 1/2 teasp. salt
  • 1/2 cup milk
  • 1 teasp vanilla
  • 2 1/2 cup bluegerries (washed and dried)
  • sugar for topping

Preparation

Step 1

Cream butter and sugar with mixer at med. speed
Add eggs, 1 at a time. Beat well after each addition.
Combine flour, salt, baking powder. Add alternately to creamed mixture with milk and vanilla
Crush 1/2 cup blueberries and add to batter. Fold in remaining berries. Spoon batter into muffin tims. Sprinkle with sugar
Bake 30 mins. 375 degrees. Cool 5 mins then turn onto wire rack
