Ingredients
- 1 lb of asparagus
- Butter and olive oil
- 2 finely chopped shallots
- 1 clove of minced garlic ( small)
- Salt and pepper
- Splash of white wine
- 6 c of chicken or vegetable broth

Step 1
Trim and roughly chop asparagus. Save some tips for garnish
Sauté in oil and butter with the finely chopped shallots and garlic.
Season with lots of salt and pepper
Deglaze pan with with splash of kwhite wine add about 6 cups of stock.
Bring soup to a quick ,boil. , simmer until asparagus and shallots are soft.
Purée in the blender. Add the asparagus tips cook 5 mins until tender.
Adjust the seasoning and serve with a swirl of crime fraiche and garlicky croutons.
