Ingredients
- 3/4 c granulated Sugar
- 3/4 c Light Brown Sugar
- 4 Eggs
- 1 T Van X
- 12 oz Browned Butter (heated in saucepan until lightly brown)
- 3/4 c Cake Flour
- 1 1/2 t Baking Powder
- 1 1/2 t Baking Soda
- 1 T Cinnamon
- 5 med Carrots Shredded
- 1 cup Coconut
- 1 1/2 c Pineapple bits
Preparation
Step 1
In mixing bowl, combine sugars, eggs and vanilla extract. Add butter and dry ingredients and mix well. Add carrots, coconut, pineapple bits. Mix well. Pour into pans.
Bake at 325 degrees for 20-25 minutes until done.
Cool and frost with Crumb Boss cream cheese icing. Decorate sides with cake crumbs. Decorate top with shell borders and carrots with icing. Yield 2 – 8″layers
