Chicken and Cheddar Croquettes

Tip: You can also bake croquettes instead of frying. Simply place them on a baking sheet and cook at 350°F for 30 minutes.
Tip: Create your own Italian-seasoned breadcrumbs by using a combination of basil, oregano, garlic powder, onion powder and Parmesan.
Ingredients
- 1 cups leftover cooked chicken, finely chopped or shredded
- 2 cups dry breadcrumbs, Italian seasoned
- 3 eggs, lightly beaten
- 1 cup sweet white onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- 2 cloves garlic, finely minced
- 1/2 cup cheddar cheese, finely grated
- 1 teaspoon lemon zest
- 1/2 teaspoon sea salt
- 1 teaspoon freshly ground pepper
- Olive oil, for frying
- Chicken broth (optional for moistening)

Step 1
In a small skillet, sauté the chopped onion and garlic in a small amount of olive oil until soft and set aside.
In a large bowl, combine chicken, breadcrumbs, cheese and 3 eggs, mixing well. Test mixture to make sure it can be formed into patties. If it seems dry, add another egg or a bit of chicken broth.
Add parsley, onions, garlic, lemon zest, salt and pepper to the bowl and mix together well.
Heat 2 tablespoons of olive oil on medium in a large skillet. Form mixture into small patties or balls and fry until golden brown. Remove and set on a paper towel to drain.
