  • 4 heads of garlic
  • 1 tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. fresh lemon juice

Step 1

Preheat oven to 350. Slice bottoms off head of garlic to loosen cloves. Leave skins intact. Place in shallow bakewear.

Drizzle with olive oil. Bake 20 mins. Cool. Slip from skins and place in food processor. Add salt, pepper, and lemon juice. Process till smooth.

Spread this mild puree on toasted French bread, baked potatoes, or grilled chicken. Makes 3/4 cup.
