Ingredients

  • 8 c (4 lb) roma tomatoes, quartered
  • 1 c yellow onions, chopped
  • 4 cloves garlic, whole
  • 2 t kosher salt
  • 1 t red pepper flakes
  • 1 t sugar
  • 1/2 olive oil
  • 1/2 c basil, thinly sliced

Preparation

Step 1

Preheat oven to 450°. Combine tomatoes, onion, garlic, salt, pepper and sugar in a large casserole dish. Toss with oil and roast 35-40 minutes or until tomatoes have softened. Remove from oben, mash with a potato masher, but leave chunky. Stir in basil.
