Ingredients
- 8 c (4 lb) roma tomatoes, quartered
- 1 c yellow onions, chopped
- 4 cloves garlic, whole
- 2 t kosher salt
- 1 t red pepper flakes
- 1 t sugar
- 1/2 olive oil
- 1/2 c basil, thinly sliced

Step 1
Preheat oven to 450°. Combine tomatoes, onion, garlic, salt, pepper and sugar in a large casserole dish. Toss with oil and roast 35-40 minutes or until tomatoes have softened. Remove from oben, mash with a potato masher, but leave chunky. Stir in basil.
