Cauliflower Garlic Parmesan

Ingredients

  • Garlic Dressing:
  • 24 oz frozen cauliflower
  • 1 TB olive oil
  • 1/4 tsp kosher salt
  • 1/8 tsp coarse black pepper
  • 1 TB olive oil
  • 1 1/2 TB grated parm cheese
  • 1 1/2 tsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried parsley
  • 1/2 tsp kosher salt

Preparation

Step 1

1. Preheat oven to 400. Grease a baking sheet or use parchment paper.

2. Add cauliflower to baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 35-40 minutes.

3. Prepare the garlic dressing. In large bowl, combine olive oil, parm cheeselemon juice, garlic, parsley, and alt. Add hot cauliflower to bowl and toss to bombine. Serve immediately.

To prepare in advance, do so. Then before serving, warm the cauliflower and toss with sauce.
