Ingredients
- 3 medium red tomatoes
- 3 medium yellow tomatoes
- 1 small red onion
- 1 - 2 cloves garlic, minced
- 10 large basil leaves, chopped
- 1 tbsp fresh oregano, chopped
- 2 tsp balsamic vinegar
- 2 tsp olive oil
- Juice from 1/2 lemon
- Salt
- 1 thin baguette
Preparation
Step 1
Dice tomatoes, removing seeds and pulp and add to a large bowl. Dice onion and add to the same bowl. Add garlic, basil, oregano, vinegar, olive oil, lemon juice and salt to taste. Set your oven to broil. Cut the baguette into thin rounds. Brush with olive oil and rub with garlic. Spread the rounds on a cookie sheet or baking pan, oiled side up and broil until lightly golden on top (about 30 seconds to 1 minute).
Add bruschetta mixture to top of each round and serve.
