Chicken Salad

Ingredients

  • 1 1/2 pounds chicken, shredded or cubed
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 cup walnuts halves, finely chopped
  • 1 1/2 cup light mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh tarragon leaves, divided
  • 2 cup black grapes, cut in half
  • Bread or rolls of choice, or lettuce leaves (for serving)

Preparation

Step 1

Preheat the oven to 350° F.

Meanwhile, place the walnuts on a sheet pan and toast in the oven for 7 to 8 minutes until golden. Set aside to cool.

For the dressing, mix together the mayonnaise, sour cream, salt and pepper. Fold in half the chopped tarragon leaves.

Place the chicken in a bowl; add the walnuts and grapes. Pour the dressing over the chicken and toss well. Sprinkle the remaining chopped tarragon leaves on top, and serve on a Kaiser roll or a bed of lettuce leaves.
