Ingredients

  • 1 1/2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking power
  • 1/4 teaspoon ground cloves
  • 1 cup chopped peeled tart apples
  • 3/4 cup chopped walnuts

Preparation

Step 1

In a large mixing bowl, combine sugar, pumpkin, wateer, oil and eggs; mix well. Combine flour, baking soda, salt, cinnamon, nutmeg, baking powder and cloves; add to pumpkin mixture.
Beat on low speed just until moistened. Fold in apples and walnuts.

Pour into a greased 9-in x 5-in loaf pan. Bake at 325 degrees for 1 1/2 to 1 3/4 hours or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Yield: 1 loaf
