Ingredients
- dash evoo
- 1/2 red onion, minced
- sea salt
- fresh ground pepper
- 1 pound ground turkey
- 1 large egg yolk
- 1/2 c. seasoned bread crumbs
- 1/2 c. ricotta cheese

Step 1
Coat skillet with evoo. Add minced onions and a generous pinch of salt. Saut 5 minute. Add garlic and sauté 3 minutes stirring frequently to keep garlic from burning.
In a large bowl add ground turkey, penurious pinch of sea salt and fresh ground pepper, egg yolk and cooled onion and garlic mixture and a little more than 1/2 bread crumbs. Get in there with hands and combine the ingredients. Spoon in 1/2 of ricotta and stir mixture will be moist but not slippery adjust with bread crumbs and ricotta. Shape into ping pong balls and put on a parchment lined baking sheet. Turn on broiler and broil until they are browned on all sides. Should take about 10 minutes.
