Ingredients
- 6 tbls. salad oil
- 2 1/2 to 3 lbs. read-to-cook broiler-fryer cut up or your favorite pieces ready-to-cook.
- 1 cup minced onions
- 1/4 cup minced green peppers
- 4 minced clover garlic
- 3 1/2 cups diced tomatoes
- 1 8 oz. can tomato sauce
- 1/2 cup Chianti or Sauterne wine
- 3 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. allspice
- 2 bay leaves
- 1/2 tsp. dried leaf thyme
- Dash cayenne pepper
- French Bread
Preparation
Step 1
In hot oil in large skillet, sauté chicken until golden on all sides.
Add onions, green peppers, garlic, and brown lightly.
Add rest of ingredients.
Simmer uncovered 30 -40 minutes or until chicken is fork tender.
Arrange chicken on serving plate and pour sauce over it.
Pass French Bread.
