CHICKEN CACCIATORE

Ingredients

  • 6 tbls. salad oil
  • 2 1/2 to 3 lbs. read-to-cook broiler-fryer cut up or your favorite pieces ready-to-cook.
  • 1 cup minced onions
  • 1/4 cup minced green peppers
  • 4 minced clover garlic
  • 3 1/2 cups diced tomatoes
  • 1 8 oz. can tomato sauce
  • 1/2 cup Chianti or Sauterne wine
  • 3 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. allspice
  • 2 bay leaves
  • 1/2 tsp. dried leaf thyme
  • Dash cayenne pepper
  • French Bread

Preparation

Step 1

In hot oil in large skillet, sauté chicken until golden on all sides.

Add onions, green peppers, garlic, and brown lightly.

Add rest of ingredients.

Simmer uncovered 30 -40 minutes or until chicken is fork tender.

Arrange chicken on serving plate and pour sauce over it.

Pass French Bread.
