Boogie's Beef Burgundy
One of Mother's favorite party entrees
- 1 clove garlic
- 2.5 T flour
- 6 chopt scallions
- 1.5 t. soy sauce
- 1/4 t. thyme
- 1 bay leaf
- 3 c. claret or burgundy
- 9 bacon slices
- 1.5 dozen small onions
- 3 dozen whole mushrooms
- beef fat or butter
- 5 pounds beef cut into bite sized pieces (I use tenderloin/filet)
Brown beef; remove to large greased covered casserole.
To the fat, add scallions, garlic, flour. Brown lightly. Pour in 1.5 c. wine. Stir until smooth. Add seasonings, the pour over the meat. Add rest of wine and cover.
All this can be done ahead; plus, I do the next step (bacon, mushrooms, onions) ahead also.
Bake casserole with beef in moderate oven 1.5 - 2 hours. After one hour, put bacon in fry pan and brown with mushrooms and onions. Stir into meat and complete cooking. Serve on noodles or rice.
Serve with green bean almondine, French bread, OR spinach casserole and salad, bread.
