French Onion Soup

Ingredients

  • 5 cups thinly sliced onions
  • 1/2 clove garlic, minced
  • 3 tbsp butter
  • 1 tbsp oil
  • 2 quarts boiling brown stock(canned beef bouillon can be used, diluted according to directions on can)
  • 1/2 cup vermouth
  • 1/2 tsp salt
  • Fresh ground pepper to taste
  • Thin rounds of toasted french bread
  • 1 cup grated mozzarella cheese
  • 1 cup grated swiss cheese
  • Parmesan cheese to sprinkle on top

Preparation

Step 1

In a heavy 4 quart covered saucepan, slowly cook the onions and garlic in butter and oil until they are a rich brown color...do not burn. This will take about 20 minutes. Stir occasionally at first but once the onions start to brown watch closely. Add stock and simmer for 30 minutes. Add vermouth. Correct seasoning. Ladle onion soup into oven safe bowls. Place toasted bread on top and mozzarella and swiss cheese. Sprinkle with parmesan. Place in oven under broiler until cheese is brown and bubbly. Serves 8
