Jean Marie's Pasta Fasol "Pasta e Fagioli"****

I enjoy "Pasta e Fagioli", and this is another one of Jean's signature dishes. You've got to enjoy beans, so Kevin's not a big fan, but I love it!This recipe makes a huge batch because Jean is always feeding a huge number of people.

Ingredients
- 2 lg onions
- 5 cloves garlic
- 4 T olive oil
- 2 cans stewed tomatoes
- 2 cans kidney beans
- 2 cans great northern beans
- 2 cans navy beans
- 1 can chick peas
- I rinse all of the beans*
- 1 ts oregano
- 1 ts basil
- S & P to taste
- 1/2 cup sugar
- 1 cup white wine
- crushed red pepper flakes
- 8 cups chicken broth
- Parmesan Cheese
- Cooked macaroni or pasta of choice
Preparation
Step 1
1. Heat oil in lg stock pot, saute' onion and garlic until onion is tender.
2. Crush one can of tomatoes and add both cans to pot. Simmer 10 min.
3. Add the remaining ingredients, except the pasta and the parmesan. Bring to a boil.
4. Serve over bowl of cooked pasta, and garnish w/ cheese.
