Ingredients

    cups shredded cheddar cheese

  • 1

    cup monterey jack

  • 1/2

    cup light mayo or miracle whip

  • 1

    can drained corn

  • 1-4 oz. can chopped green chiles drained

  • 2

    tsp chipotle-adobo puree

  • 1/4

    tsp garlic powder

  • 1

    tomato finely chopped

  • 1/4

    cup sliced green onion

  • 2

    T chopped fresh cilantro

Directions

Preheat oven to 350. Combine cheeses, mayo, corn, chiles, puree and garlic powder. Coat a 9 inch pie pan with cooking spray and spread with cheese mix. Mixture can be made ahead and covered in the frig for 24 hours before. Bake, covered with foil for 20 minutes, then remove foil and bake addt'l 10 min., until just starts to brown. In bowl, combine tomato, green onion and cilantro. Pile the tomato mixture in the center and serve with chips or red peppers, celery and jicama.
