Eggplant Parm

Ingredients

  • Eggplant, peeled and sliced
  • 2 eggs, beaten
  • Bread crumbs
  • Spaghetti sauce
  • Shredded mozzarella cheese
  • Parmesan cheese
  • Basil

Preparation

Step 1

Preheat oven to 350 degrees.
Dip eggplant slices in egg and bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 7 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover bottom of pan. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella cheese and Parmesan cheeses. Repeat remaining layers ending with the cheeses. Sprinkle with basil on top.
Bake in preheated over for 35 minutes or until golden brown.
