Ingredients
- 3/4 cup butter, softened
- 3 tbsp sugar
- 2 tsp lemon juice
- 1-1/4 cups flour
- 1/2 cup cornstarch
- 1 tsp grated lemon peel
- Frosting
- 1/4 cup butter, softened
- 1 cup icing sugar
- 2 tsp lemon juice
- 1 tsp grated lemon peel
Preparation
Step 1
1. In small bowl, cream butter and sugar until light and fluffy. Beat in lemon juice.
2. Combine dry ingredients and lemon peel and gradually add to creamed misture.
3. Shape into a 1-1/2 inch roll, wrap in plastic wrap and chill for 1 hour until firm.
4. Unwrap and cut into 1/4 in slices. Place 2 inches apart on ungreased cookie sheets.
5. Bake at 350 deg F for 8-10 minutes. Cool completely on pans on wire racke.
6. In small bowl, beat butter until fluffy. Add icing sugar, lemon juice and peel and beat until smooth. Spread over cooled cookies. Sprinkle with additional lemon peel if desired. Let stand until set.
