Ingredients

  • NOTE:
  • 2 tbls. oil
  • 1-2 lb. beef stew meat, cut into bite sized pieces
  • 1 lge. onion, diced
  • 2 stalks celery, sliced thin
  • 1 lge. can diced tomatoes
  • 4 potatoes, cut in bit sized pieces
  • 3 lge. carrots, sliced thin
  • 1 small can peas, drained
  • 1 small can corn, drained
  • 2 quarts stock
  • 1-2 Tbls Better than Bouillion beef base (comes in a jar)
  • Other ingredients, such as mushrooms, beans, can be added to suit ones taste.

Preparation

Step 1

Brown stew meat in hot oil in soup pot.

Add onions and celery and saute with meat.

Add tomatoes, Better than Bouillion Beef Base (if desired), and 2 qts stock.

Season with salt, pepper, parsley.

Cook slowly for about 2 hours.

Add potatoes and carrots and continue cooking for an additional hour or until potatoes and carrots are done. Noodles or rice can be substituted for potatoes.

More Stock can be added if needed.

Add peas and corn.

Serves 8-10
