Ingredients
- 1 7 oz tubes almond paste
- 1 c. powdered sugar
- 1/2 c. sugar
- 2 large egg whites
- 2 c. sliced almonds
- 1 c. semisweet chocolate
Preparation
Step 1
Break up paste into pieces. Place paste, sugars in processor. Pulse until mixture resembles coarse meal.
With machine running gradually add egg whites, until blended. Transfer to bowl and chill for 1 hour
Preheat oven to 350. Line baking sheets with parchment paper.
Place sliced almonds in small bowl. Using damp hands roll scant 1/4 c. dough into 5 inch long roll. Roll log into almonds to coat. Transfer to sheet. Bend to to form horseshoe shape. Repeat with remaining dough.
Bake 18-23 mins until golden brown. Cool.
Melt chocolate, coat one side of cookie with chocolate. Chill about 15 mins to set chocolate
