Snacks (Spicy & Salty Boiled Peanuts)

Ingredients

  • 4 pounds raw peanuts
  • 1/2 cup cajun seasoning
  • 1/4 cup crushed red pepper
  • 1/4 cup salt
  • 5 cloves garlic, smashed

Preparation

Step 1

1) In a large stockpot, combine peanuts and cold water to cover; let stand for at least 12 hours. Drain.

2) Return peanuts to stockpot; add water to cover. Add cajun seasoning, crushed red pepper, salt and garlic. Bring to a boil over medium-high heat. Boil peanuts, adding water if necessary, for 6 to 8 hours or until peanuts are tender. Remove from heat, and let peanuts cool in liquid. Cover and refrigerate for up to 3 days. Drain peanuts before serving.
