Ingredients

  • 2 T Olive Oil
  • 2 C thinly sliced yellow onion
  • salt
  • pepper
  • For the dough -
  • 1 pkg Yeast
  • 1 T Sugar
  • 1 T minced Garlic
  • 1/4 C plus 3 T Olive Oil
  • 1 C warm Water
  • 3 1/2 C Unbleached Flour
  • 3 T Kosher Salt

Step 1

Preheat oven to 350. Heat 2 T Olive oil in a large saute pan over medium heat. Add onions and sprinkle with salt & pepper. Saute until caramelized, about 15 min. stirring occasionally. Remove from pan and cool completely. Using an electric mixer with a dough hook, whisk the yeast, sugar, garlic 2 T olive oil, warm water and caramelized onions together for 2 min or until yeast is dissolved. Add salt & flour. With the mixer on low, mix until the dough starts to come together. Increase speed to medium-high and mix until dough pulls away from the sides of the bowl. Place the dough in a well greased mixing bowl and turn once to coat. Cover the bowl with plastic wrap and place in a warm place to rise until doubled, about 1 1/2 Hrs. Turn dough out onto a well greased baking sheet. Punch down and press out to a 15" circle or 12"x17" rectangle. Brush with olive oil and srinkle with salt. Lightly cover and let rise about 1 hour. Bake 30-35 min.
