Chocolate Chip - Banana Muffins

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1/4 cup canola oil
  • 1/4 cup apple butter
  • 1/3 cup 1% low-fat buttermilk
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla
  • 1 cup mashed ripe bananas
  • 1/3 cup mini-semisweet chocolate chips
  • 1/4 cup chopped toasted walnuts
  • 1 tablespoons shredded coconut (optional)

Preparation

Step 1

Preheat the oven to 350 degrees. Coat a 12-cup muffin pan with no-stick spray.

In a large bowl, combine the flour, baking powder, cinnamon, baking soda, nutmeg, and salt. Mix well.

In another large bowl, combine the brown sugar, oil, apple butter, buttermilk, egg, egg white, and vanilla. Using an electric mixer, beat on medium speed for 4 to 5 minutes, or until smooth and light. Reduce the speed to low and gradually add the flour mixture, beating until just combined. Fold in the bananas, chocolate chips, and walnuts.

Divide the batter equally among the muffin cups, filling them about two-thirds full. Sprinkle with the coconut (if using). Bake for 15 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins stand for 5 minutes, then remove from the pan.
