Ingredients
- 2 large eggs
- 4 tablespoons margarine or butter,melted
- 1/2 cup low-fat milk
- 3/4 cup low-sugar orange marmalade (like Smuckers)
- 1 tablespoon orange zest
- 1 3/4 cupsall-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 12 teaspoons low-sugar orange marmalade
Preparation
Step 1
1. Preheat the oven to 375degrees. Lightly spray 12 muffing cups with non-stick baking spray(or line with paper or foil liners).
2. In a medium bowl, whisk together first 5 ingredients (eggs through zest). Set aside.
3. In a large bowl, combine the flour, sugar, baking soda, and baking powder and stir. Make a well in the center and add the marmalade mixture. Using a large spoon, stir just until the dry ingredients are moistened.
4. Spoon the batter evenly into prepared muffin tins, filling each cup two-thirds full.
5. Bake for 15 minutes or until the center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack. Serve each muffin with 1 teaspoon jam.
