Mom's Oatmeal Cake

Ingredients

  • Cake:
  • 1 c oats, uncooked
  • 1 1/2 c warm water
  • 1 c sugar
  • 1 c brown sugar
  • 1/2 c butter
  • 1 1/3 c flour
  • 1 t baking soda
  • 1 1/2 t cinnamon
  • 1/4 t salt
  • 2 eggs
  • Frosting:
  • 3/4 c brown sugar
  • 1 stick butter
  • 2 t evaporated milk
  • 1 c sweetened flaked coconut
  • 1 c chopped nuts (optional)

Preparation

Step 1

Mix oats in water and set aside.
Cream butter and sugars.
Add eggs and mix well.
Mix dry ingredients together.
Add to butter mixture and mix well.
Place in a greased 9 X 13 X 2 inch pan.
Bake at 350 for 50 minutes.
Melt brown sugar and butter and milk together.
Stir in coconut and nuts.
Spread over cake.
Place under broiler for 2 minutes or until frosting is bubbly and light browned.
