Ingredients
- 1 pound penne pasta (whole wheat or enriched)
- 1 pound raw shrimp (about 20), peeled and deveined
- 2 cups asparagus, cut into 1” pieces
- 1 red pepper, cut into pieces
- 1 medium onion, minced
- 2 large cloves garlic, minced
- Olive oil
- 1 can crushed tomatoes
- 1 can whole tomatoes
- 1 cup dry white wine (or chicken stock)
- 1 cup half-n-half cream
- 1/2 cup Parmesan cheese, grated
- 2 teaspoons basil
- 1 teaspoon tarragon
- 1 tablespoon parsley
- Salt and pepper to taste
