Shrimp and Asparagus Penne

Ingredients

  • 1 pound penne pasta (whole wheat or enriched)
  • 1 pound raw shrimp (about 20), peeled and deveined
  • 2 cups asparagus, cut into 1” pieces
  • 1 red pepper, cut into pieces
  • 1 medium onion, minced
  • 2 large cloves garlic, minced
  • Olive oil
  • 1 can crushed tomatoes
  • 1 can whole tomatoes
  • 1 cup dry white wine (or chicken stock)
  • 1 cup half-n-half cream
  • 1/2 cup Parmesan cheese, grated
  • 2 teaspoons basil
  • 1 teaspoon tarragon
  • 1 tablespoon parsley
  • Salt and pepper to taste
