Ingredients
- 2 lb extra lean hamburger
- 1 medium onion, finely chopped
- 1 small potato, grated
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme
- 2 tbsp tomato ketchup
- 1 egg, slightly beaten
- 1 (10 oz) can tomato soup
- 1 (19 oz) tomato sauce
- 2 tbsp lemon juice
- 6 tbsp brown sugar
- 1/4 to 1/2 cup basil, chopped
- salt & pepper to taste

Combine hamburger, onion, potato, salt, pepper, thyme, ketchup and egg and blend thoroughly. Shape into small meatballs. Bake at 400F on a rack sprayed with Pam on a foil-lined cookie tray for 25-30 minutes (until somewhat browned). For sauce: combine tomato soup, tomato sauce, lemon juice, brown sugar, basil and salt & pepper. Bring to a boil, stirring constantly and immediately reduce heat to a simmer for 5 minutes. Put meatballs into oven proof dish, pour sauce over and bake at 350F for about 1 1/2 hours, basting occasionally. If using for a main course, serve over rice. Freezes well.
