Asian Chicken Noodle Soup (Ramen noodles)

Ingredients

  • 2 (14 oz.) cans chicken broth
  • 1 Tbsp. soy sauce
  • 1 tea. grated fresh ginger
  • 1/8 tea. crushed red pepper flakes
  • 1 red bell pepper, cored and cut into 3/4" pieces
  • 1 carrot, chopped
  • 1/3 cup thinly sliced green onions
  • 1 (3 oz) pkg. ramen noodles, any flavor
  • 1 cup chopped cooked chicken
  • 1 cup fresh halved snow peas or 1/2 (6 oz) pkg. frozen snow peas, thawed and halved

Preparation

Step 1

In a large saucepan over medium heat, combine 1 cup water, broth,m soy sauce, ginger and red pepper flakes. Bring mixture to a boil. Add bell pepper, carrot and onions. Return to boiling and then reduce heat. Cover and simmer for 4-6 minutes or until vegetables are crisp-tender. Remove seasoning packet from ramen package and reserve for another use. Break up noodles and add to saucepan. Stir in chicken and pea pods; simmer for 2 minutes or until noodles are tender and pea pods are crisp-tender.
